Mont Rochelle Cabernet Sauvignon 2007

Tasting notes:
Garnet red colour, is complimented by notes of cassis, black cherry, and cigar box on the bouquet. It is richly textured with lush, ripe flavours of blackberry, cassis and has an arresting display of velvety juicy tannins.
Vinification:
Grapes are hand picked at 25-25.5 degrees Balling. Destalked and cold soaked for 2 days. Fermented using Laffort F10 and Lallemand D80 yeast strains at temperatures between 25-30 degrees C . Wine is matured in 33% New 225 litre French Oak barrels. Malolactic fermentation occurred in barrel. All Barrels come from the forests of Alliers, Nevers &Troncais. Spent a total of 32 months in barrel.
