Tasting notes:
The Cabernet, Merlot and Cab/Franc produces a wonderful blend with beautiful Morello Cherry notes and nuances of leather, forest and cigar box. On the palate, rich savoury flavours combine with subtle tannins with ripe plum and raspberries. A delightfully long finish.
Vinification:
The aim of the Shiraz is to move away from the New World style’s roasted peppercorn and over oaked flavours to a more elegant Rhone style’s fruitier yet complex style. Aged for 12 months in a combination of second and third fill American Oak barrels, leads to a lighter Shiras with ripe cherry and strawberry flavours. An elegant cinnamon spice and light earthy notes and a lingering long sweeter finish.
